the rain has been sending the leaves to the ground, so everything is looking more empty and cold 🍁 to warm up your kitchen and yourself, i’ve snagged my mother’s navy bean soup recipe. i think soups are best made on a slow, cozy sunday afternoon…
ingredients /
1 ib dried navy beans
5 cups water
1 can beef broth
1 chicken bouillon cube
1 medium or large onion
1 garlic clove, finely diced
2 russet potatoes, diced
4 carrots, sliced
2 ribs celery, sliced
¼ cup butter
2 cups chopped ham
1 or 2 bay leaves
salt and pepper to season
directions /
① in large soup pot sauté onion and garlic in butter ② add in navy beans, water, beef broth, and bouillon cube ➝ bring to a boil and simmer covered until beans are tender (approx. 2 hours) ③ add potatoes, celery, carrots, ham and bay leaves ④ season with salt and pepper ⑤ cook until vegetables are done
tips /
+ if you prefer a smoother texture from the onion cut across a fine grater… i just grated directly into the pot, as well as the garlic clove.
+ add more water to bulk up the soup’s broth. flavor as needed.
