it’s been a crisp autumn with the cold air and leaves turning their vivd colors~~

unfortunately, i’ve caught a cold, so to keep myself busy this weekend i’m planning on baking up a homemade chicken pot pie πŸ‚πŸ₯§

ingredients /
1 package frozen mixed vegetables
β…“ cup butter or margarine
β…“ cup all-purpose flour
β…“ cup chopped onion
Β½ teaspoon salt
ΒΌ teaspoon pepper
1 ΒΎ cups chicken broth
β…” cup milk
2 Β½ to 3 cups shredded rotisserie chicken
2 pillsbury pie crusts

directions /
β‘  rinse frozen mixed vegetables in cold water to separate; drain β‘‘ heat butter in saucepan over medium heat until melted ➝ stir in flour, onion, salt and pepper ➝ cook, stirring constantly, until mixture is bubbly; remove from heat β‘’ stir in chicken broth and milk ➝ heat to boiling, stirring constantly ➝ boil and stir for 1 minute β‘£ stir in shredded chicken and vegetables

bake /
β‘  heat oven to 425Β° β‘‘ line pie dish with single pastry crust β‘’ pour chicken mixture into pastry lined pie dish and spread evenly β‘£ top with second pastry crust and crimp the edges together β‘€ bake about 35 minutes or until golden brown

tips /
+ walmart sells a 12 ounce bag of frozen mixed vegetables (carrots, green beans, corn, and peas) for a like a $1.
+ cover the edges of the pie with aluminum foil to prevent from burning~~
