listed below is a hearty tomato soup recipe i consistently ate my way through last week alongside a spring mix salad sprinkled with crumbled goat cheese, chopped pistachios and sliced honey crisp apples

ingredients /
2 Tbsp butter or margarine
1 medium onion, finely chopped
1 garlic clove, finely chopped
½ teaspoon paprika
1 ½ teaspoon dried or fresh chopped basil leaves
6 oz cream cheese, softened to room temp
1¼ cups whole milk
2 cans (10 ¾ oz each) condensed tomato soup
2 cans (14.5 oz each) petit diced tomatoes, undrained

directions /
① melt butter in 3-quart saucepan over medium heat ② sauté onion and garlic in butter for 2-5 minutes; remove from heat ③ stir in paprika, basil, and softened cream cheese ④ gradually stir in milk and tomato soup alternately ④ add in petit diced tomatoes ⑤ warm over medium heat, stirring frequently, until hot
